Narnie's Pumpkin Soup

This recipe is one from my late grandmother and a very well-liked one in our family. Goes perfect with Ripe Deli Savoury Scone and a spread of butter.

Recipe:
- 60% Butternut pumpkin (approximately 2kg)
- 40% Carrots (approximately 1.4kg)
- 2 large white onions
- 2 Tablespoons of butter
- Garlic & ginger to taste
- 4 cups of vegetable stock
- 1 teaspoon of cumin
- 1 teaspoon of dried coriander
- Salt & pepper
Sour cream, fresh herbs & hot bread for serving.
Method:
1. Lightly sauté diced carrot, pumpkin and onion with butter in a hot soup pot.
2. Add stock & flavourings.
3. Cook for 1-2 hours, stirring every so often to ensure the bottom doesn't burn.
4. Blend while hot or serve chunky as is.
5. Garnish with a generous dollop of sour cream and fresh coriander or chives.
6. Serve with hot bread or Ripe deli Scone and enjoy!
