Ripe Deli Savoury Scone Recipe

Goes perfect with a bowl of Narnie's Pumpkin Soup.



Recipe:

- 2 cups of plain flour

- 2 teaspoons of baking powder

- 1 teaspoon of salt

- 1 teaspoon of black pepper

- 50g unsalted butter

- 1/2 cup of fresh parsley

- 1 whole diced tomato

- 1 cup grated cheese

- 2 cups of finely chopped baby spinach

- 3/4 cup of milk (approximately)


Method:

1. Preheat oven to 200C.

2. Lightly flour or line tray with baking paper.

3. In a large bowl, sift together the flour, baking powder, salt and pepper.

4. Dice up the cold butter and rub it into the dry mixture using your fingers until it resembles fine breadcrumbs.

5. Add the parsley, tomato, cheese and spinach and mix.

6. Pour in the milk and carefully fold into a dough.

7. Cut dough into six pieces and place on the tray with a little extra cheese on top.

8. Bake for 15 minutes until golden brown & serve warm with butter.


Serves: 6
