Morning Muesli

Muesli can be so expensive to buy from the shops but can be made at home using whatever is in your pantry. Sophia's Pantry is filled with grains, nuts and seeds and lately, my fridge has been full of overripe bananas. This recipe is the perfect way to use up old ingredients lingering around the kitchen.



Recipe:

- 1 Overripe Banana

- 1 teaspoon of Vanilla extract

- 1 Tablespoon of melted Coconut oil

- 1 Tablespoon of Date syrup

- 1 cup of Oats

- 1/3 cup of Coconut thread

- 1/3 cup of nuts, seeds or dried fruits

- 2 teaspoons of cinnamon


Method:

1. Preheat oven to 180C bake.

2. Mash Banana in a medium-sized bowl.

3. Melt coconut oil.

4. Add all wet ingredients to bowl and mix.

5. Add all dry ingredients to the bowl and mix.

6. Place in medium-sized clusters on a lined baking tray.

7. Bake for approximately 20 minutes, tossing around at halfway.

8. Enjoy as-is or with milk, yoghurt and fruits!


Serves: 5 portions, lasts 4 days in an airtight container.
